Michel Bras is among the first modern chefs to espouse a natural approach to cooking. An undisputed icon, he has never left his native Aubrac, France, where his eponymous three-star restaurant has been in operation since 1992.

In this demonstration from MAD1, Bras assembles one of the most copied dishes of all time: the gargouillou.
