The Korean-American David Chang is the chef and owner of the Momofuku Restaurant Group, which began in 2004 with a modest East Village noodle shop and today includes some of the most iconic contemporary restaurants and bars in the world. These are Momofuku Noodle Bar, Ssäm Bar, Nishi, Kawi, Bar Wayō, and Ko (which holds two Michelin stars) in New York; Momofuku Noodle Bar and Momofuku Kojin in Toronto, Ontario; Momofuku CCDC in Washington, DC; Majordomo in Los Angeles; Momofuku Noodle Bar in Las Vegas; and Momofuku Seiobo in Sydney, Australia.

David Chang is also host of the podcast The Dave Chang Show and the Netflix series Ugly Delicious. This is his talk from the second MAD Symposium, Appetite, in Copenhagen in 2012.
