Opening a Restaurant is Scary

Tatiana Levha is a chef who trained under Pascal Barbot at l’Astrance and Alain Passard at l’Arpège before teaming up with her sister Katia earlier this year to open Le Servan, a restaurant in Paris’ 11th Arrondissement.

Levha appeared at MAD4: What’s Cooking? on the same day as the likes of Olivier Roellinger and Alain Senderens to represent today’s generation of young chefs. In her talk, she is open about the stresses involved in opening a restaurant, and how you can use fear to your advantage.
