MAD Academy

Business & Profitability

The business stuff you didn’t learn in culinary school

Most hospitality careers start with craft, creativity, and technical training, but the reality of running a financially healthy business is usually learned on the job. This intensive programme focuses on what you typically don’t get in culinary school: how hospitality businesses actually work, how money and decisions connect, and how to build a model that is both stable and sustainable.

Expect practical tools, real examples, and real numbers, not theory for its own sake. Everything is designed to be used immediately, with small, concrete changes you can take back into your business. At its core, it is about making hospitality businesses work in the real world for guests, for teams, and for the people running them.

What will I learn?

You’ll get sharper and more confident in how you run your business, especially on the financial and strategic side.

You’ll learn how to:

  • Actually read and use your P&L in day-to-day decisions
  • Understand what’s really driving (or hurting) your business model
  • Make clearer strategic choices and priorities
  • Work with pricing, margins, and cost in a practical way
  • Shape your organisation so it supports the business, not slows it down
  • Think more clearly about growth—when to push, and when not to
  • Bring sustainability into real business decisions, not as a side topic

Is this course for me?

This is for you if you’re already running a hospitality business, or very close to it, and want to feel more in control of the business side of things.

It’s especially for:

  • Owners or founders a few years into running their business who want stronger financial and strategic clarity
  • Experienced managers who make real business decisions every day
  • People preparing for ownership or stepping into a more senior operational role
