MAD Mondays – Fall 2021

We are delighted to present our upcoming series of MAD Mondays.

After the trying period we’ve all just been through, we can’t wait to welcome everyone to our new headquarters and classroom for talks from three outstanding speakers on subjects that we believe are of keen interest to the hospitality industry in particular, and the larger public in general.

Each evening will feature snacks prepared by chef Jonathan Tam and the team at his new restaurant JATAK, along with beverages curated by MAD and guests.

Ticketing
Tickets can be purchased for each event separately via the corresponding links below and include a snack and drink. Space is limited and talks will be held in English.

MAD Mondays – Eating to Extinction with Dan Saladino

We kick off our fall series of MAD Mondays with Food journalist and broadcaster Dan Saladino! He’ll be presenting his brand new (and first) book, Eating to Extinction: The World’s Rarest Foods and Why We Need to Save Them, which has been awarded The Jane Grigson Trust Award.

Dan Saladino makes programs about food for BBC Radio 4 and BBC World Service. His work has been recognized by the Guild of Food Writers Awards, the Fortnum and Mason Food and Drink Awards, and in America by the James Beard Foundation. He lives in Cheltenham, England but his roots are Sicilian.

MAD Monday – Brian McClintic

From sommelier to van life, Brian McClintic will speak about his unconventional path in the wine industry, including his current project Viticole Wines.

Brian McClintic has spent the better part of 15 years in the wine industry, spanning restaurant destinations such as Little Nell in Aspen, before his foray into entrepreneurship. Much of his wine journey is chronicled in the documentaries SOMMSOMM: Into The Bottle, and SOMM 3. After co-founding a wine bar in Santa Barbara, Brian left the restaurant floor to launch Viticole in 2016, an online wine subscription focused on ancestral farming and cellar practices. Viticole custom curates special bottlings directly with growers from around the world who continue to redefine what a nature-led vision of the wine industry looks like, on land and in the glass.

MAD Monday – Connie Hedegaard
November 08 | 20:00 CET

Connie Hedegaard is the former European Commissioner for Climate and Board Chair of CONCITO, Denmark’s green think tank. She’ll join us to share her insights and experience into what it means to be a public leader and on who it falls to achieve positive change.

Climate action has been a centerpiece of Connie Hedegaard’s political effort since appointed Minister of Environment to Denmark in 2004. As the EU Commissioner for Climate Action (2010-2014), she led negotiations towards the adoption of the EU 2030 Climate & Energy Framework; was responsible for the 2050 Roadmap for moving to a low carbon economy; and represented the EU in the international climate negotiations. She currently chairs a number of foundations and executive boards, including OECD’s Round Table for Sustainability, KR Foundation, Aarhus University, and Denmark’s green think tank, CONCITO.
