MAD Science at WIRED — The Quest for Flavor

 

Our head of Research and MAD Scientist, Arielle Johnson, is on a quest for flavor, bringing tools from engineers, plant scientists, microbiologists, and scholars to make science out of some of the ideas that have been percolating through MAD. Right now she’s in the US working with the MIT Media Lab on exactly that—but first, here’s Dr. Johnson and noma’s head of R&D Lars Williams, breaking down their collaborative and complementary motivations and methods for finding new flavors with science, insects, and fermentation in this video from WIRED UK.
