MAD1 / Vegetation

We were fortunate to have some amazing speakers participate in the first MAD, which had as its theme vegetation. Among the topics explored were how we can be more thoughtful, analytical chefs; how we can better understand issues of agriculture and the environment; and how we can truly connect with the source of our ingredients.
